I use Epson presentation paper - matte finish - legal size. It makes a quality looking cover. I usually buy it from Amazon, ebay or directly from Epson when they have it on sale.

Presentation paper is the best. I get mine at Staples, Amazon or Epson when on sale.

I find matt and satin finish paper available in my local independent computer store. There's no need to spend big money on branded stuff like Epson or Kodak. I have also used Costco's own brand but that's got a sort of semi-glossy finish that not everyone might like.
